Apple crumble baked oats with a molten custard centre
This. is. a. thing. of. beauty.
Had an obsession with baked oats last winter, and rightly so. It’s just an excuse to have cake for breakfast.
Method
Preheat the oven to 180°C
Mix all the dry ingredients in a small bowl
Add the milk bit by bit until you have a runny cake batter, then add the peanut butter and mix through well
Mix the cream cheese, syrup and vanilla in another small bowl and add a dash of milk at a time until you have the texture of a smooth greek yogurt
Put the cake batter in a small ramekin or oven proof dish, saving about 2 tbsp worth
Add the cream cheese mix to the centre and cover it with the remaining cake batter
Sprinkle with oats and a little bit of sugar then bake for 10-12 mins, until it is risen and golden, but you can feel that the centre is molten
Drizzle with peanut butter and serve with apple
Notes + Variations:
You can fill this with actual custard too, I just decided to make this slightly more breakfasty.
