I’ve been brought up to be an absolute sucker for Rice Krispie cake, so made this to encourage biscoff lovers to make some.
This makes a mini one, which makes 2 slices, as I struggle to make a full cake and finish it before it goes bad. Whoops.
One of the easiest + tastiest cakes around.

Recipe, makes 2 slices;

Single serve biscoff Rice Krispie cake;
1 tsp butter
1 tbsp syrup
1 tbsp biscoff
4 tbsp rice krispies
50g chocolate for the top

Method

  1. Melt the butter, biscoff and syrup together in a small bowl in the microwave for about 30 seconds

  2. Stir well until creamy, then add the rice krispies

  3. Press down firmly into a lined bowl/ small tin, so its about 2.5cm thick

  4. Melt your chocolate

  5. Pour the chocolate ontop, spread around

  6. Refrigerate for at least 30 mins then serve

Notes + Variations:

Use any puffed cereal for this - I used puffed wheat, but puffed rice, millet or quinoa would do the trick too.
