The PERFECT meal prep. I’ve become obsessed with making these, so I have an instant breakfast or snack throughout the week. High protein, high fibre, and something that’s light, but still nice and filling.
This pairs perfectly with greek yogurt, and some nut butter.

Recipe, serves 3-4;

1 cup oats
45g chocolate protein powder
1/4 cup cocoa powder
2 tbsp sugar
1 egg
Just less than 1 cup warm water or milk
1/4 tsp baking powder
Salt
Chocolate to top

Method

  1. Preheat your oven to 170°C.

  2. Add all your dry ingredients to a medium mixing bowl, mixing so everything is combined.

  3. Add your water or milk, mixing as you add it, until you have a cake batter consistency.

  4. Crack in an egg and mix through well.

  5. Pour your batter into a lasagne dish, or into 4 separate ramekins/ bowls.

  6. Top with chopped chocolate, then bake for 15-20 minutes, until risen and cooked through.

  7. Remove from the oven and sprinkle with maldon salt.

  8. Leave to cool, then refrigerate for up to 1 week.

  9. Serve as it is, or warm with yogurt and fruit.

Notes + Variations:

You don't actually have to add the egg if you don’t want to - it just helps in the baking, and makes this more suitable for an on the go snack.
