Baked cheesy veg

I was craving veg & cheese, so decided to whip up this baked cheesy veg in about 10 minutes. It actually makes the perfect light meal, and you can add some cooked pasta, or chicken to make this more satisfying too :P.

Recipe, serves 1;

THE VEG
1 tbsp cream cheese
1/4 cup grated cheese of choice
1/4 cup milk
1 small tsp dijon mustard
1/2 tsp smoked garlic powder
2 cups chopped green veg of choice (I used broccoli, sweetcorn & cabbage)
Salt and pepper

TO TOP
1/4 cup milk
1 tsp cream cheese
1/4 cup grated cheese
1 tsp dijon mustard
Salt and pepper
30g finely grated cheese to top (I used pecorino)

Method

  1. To a wok, add your cream cheese, grated cheese, milk, garlic powder and mustard, and simmer on medium heat, until your cheese is melted, and the sauce has slightly thickened - this should take a couple of minutes.

  2. In the meantime, chop your veg, then add to your wok, and allow them to shrink down.

  3. Season to taste, then once the veg has softened slightly, add to your baking dish/ skillet and set aside

  4. Add all the ingredients for the top (apart from the 30g grated cheese) to a microwave safe bowl, and microwave for about 1 minute.

  5. When done in the microwave, your sauce should have significantly thickened, as the cheese melts - if it hasn’t, microwave for another 30 seconds.

  6. Pour the sauce over the top of your veg, and top with a sprinkling of your grated cheese.

  7. Preheat your grill, or the oven to 200°C.

  8. When hot, bake in the oven for 10-15 minutes, or leave under the grill until the cheese is melted and golden brown.

  9. Serve as a side, with sausages & mash, or with fish/ grilled chicken.

Notes + Variations:

Literally use any cheese/ veg you wanted. This would work with all types of kale, and you could even add cooked pumpkin/ squash.
