Tiramisu baked oats

Imagine tiramisu, but BREAKFAST, and more in the form of a molten cake. It’s actually the best thing I ever did.

Recipe, makes 1;

1 tsp coffee
Enough milk to fill the water/ coffee mixture to 90ml
3 tbsp oat flour
1 tbsp vanilla whey protein powder
1/4 tsp baking powder
1/4 tsp bicarbonate of soda
Splash vanilla
Squeeze lemon
1 tbsp sugar
Pinch salt

THE CENTRE
2 tsp cream cheese
Splash vanilla
Enough water to form yogurt consistency
1 tsp syrup (agave is good)

Method

  1. Preheat the oven to 180°C

  2. If you dont have oat flour, blend 1 cup oats in a blender until they look like a fine flour

  3. Add the oats to a bowl and add the rest of the dry ingredients and mix well

  4. Dissolve the coffee in a drop of warm water in a measuring jug, then fill up with milk until it reaches 90ml

  5. Add the dissolved coffee and milk mixture and mix well, adding the rest of the oat ingredients

  6. Mix the filling ingredients together until it looks like runny yogurt, then add it to the centre of the oats

  7. Spoon the oat mixture over the filling so that it’s covered and bake for 15-17 mins until cooked through

  8. Sprinkle with cocoa powder and serve

Notes + Variations:

If you don’t have protein powder, use 2 tbsp oat flour, and 2 tbsp self raising wholemeal flour - adding 1/2 a mashed banana would also help massively.
