Chocolate orange cake pop energy balls

Some of the best snacks ever, and they’re great post workout.
Ps. no dates in sight - these are literally just a cake pop, packed with goodness. Almost too good to be true.

Recipe, makes 6-8 balls;

4 tbsp oats, ground to resemble flour
30g chocolate whey protein
1 heaped tbsp cacao/ cocoa powder
200ml orange juice
Pinch salt
2 heaped tbsp sugar
1 tbsp plain yogurt
1/2 heaped tsp baking powder
1/4 tsp bicarbonate of soda
1 heaped tbsp smooth cashew butter*

1 tbsp chocolate spread
1 tbsp cream cheese

200g chocolate Orange or dark chocolate

Method

  1. Blend about 2 cups oats into a fine flour

  2. Mix all the dry ingredients together, then add the orange juice bit by bit until a cake batter forms

  3. Add the yogurt and cashew butter and mix well

  4. Transfer to a microwave safe bowl and microwave at 1000W for 4-6 mins until risen and cooked through

  5. Spoon the hot mixture into a different bowl, leave to cool for a couple of mins and then add the chocolate spread and cream cheese

  6. Knead through with your hands until combined, then press and roll into 6-8 balls

  7. Melt the chocolate, roll each ball until fully coated, top with orange rind and set in the fridge for 30 mins - 1 hour.

    Keep in an airtight container in the fridge for up to a week.

Notes + Variations:

If you don’t have whey protein, you can use whichever one you have, but the whey has a massive impact on the texture and makes them cake like.
Most vegan proteins result in a dense, doughy texture, so as long as you don’t mind that, go ahead!!!
*You can use any nut butter here, as long as it’s smooth.
