I don’t even like digestive nibbles, but I did like these. If that doesn't say something, I don't know what will.

Recipe, makes 1 batch of around 40 nibbles;

1 big tbsp smooth cashew butter
1 tbsp oat flour
1 tsp plain flour
Pinch salt
1 big tbsp agave syrup

150g chocolate - ideally baking chocolate (has high fluidity, so you dont make an absolute mess)

Method

  1. Preheat the oven to 170°C

  2. Mix all the ingredients in a small bowl until you have a small dough

  3. Roll the dough into a long sausage of about 1.5cm thick.

  4. Cut into lots of small pieces of about 1cm

  5. Roll them into balls, then put onto a lined baking tray with small gaps between each one

  6. Bake for 15 mins in 5 minute intervals, or until they start to go golden brown

  7. Leave to cool and melt your chocolate

  8. Coat each ball in the melted chocolate, then leave on a lined baking tray to cool in the fridge and serve.

  9. Keep in an airtight container in the fridge for up to 1 month.

Notes + Variations:

You can use milk or dark chocolate for these - whichever you prefer. I’m dark all the way.
