I don’t know where this came from, but it HAD to be done.
A bloody good breakfast, or post dinner sweet treat.

Recipe

THE BAKED OATS
3 tbsp oat flour
1 tbsp chocolate (or vanilla) whey protein powder
1 tbsp cocoa powder
1 tsp sugar/ sweetener
1/4 tsp baking powder
1/6 tsp bicarbonate of soda
Pinch salt
Warm water until you have a cake batter consistency
Whipped cream/ yoghurt to top

THE CHOCOLATE LAYER
1/4 cup dark chocolate chips, or 40g chocolate
Splash milk

Method

  1. Preheat the oven to 170°C.

  2. Combine with your protein powder and oat flour with a pinch of salt, and your bicarbonate of soda and baking powder.

  3. Add your cocoa powder to the top of the mixture, then pour over a splash of warm water and mix it all together.

  4. Add drops of water bit by bit until you have a cake batter.

  5. Taste and add sweetener if needed (I recommend 1 tsp sugar or syrup).

  6. Add to an oven proof ramekin/ bowl/ glass, then bake for 12-15 minutes, until it’s risen and springs back to the touch.

  7. Whilst your baked oats bake, to a microwave safe bowl, add your chocolate & a splash of milk.

  8. Microwave your chocolate for about 90 seconds, in 30 second intervals, until you have a thick, ganache looking mixture.

  9. Once your baked oats are out the oven, leave to rest for a couple of minutes, then pour over your ganache, then top with whipped cream/ a spoonful of yogurt and serve.

Notes + Variations:

You can quite easily make these vegan, although I’d say that whey protein is essential for the texture, but vegan protein will work.
