Halloween chocolate fudge cake

Made this for halloween, and everything about it makes me happy, especially the fact that it matches my nails.

Recipe, serves 1-2 as a snack;

2 tbsp sugar
2 tbsp ground oats
1 heaped tbsp chocolate protein powder (or 1 tsp almond flour and 1 tsp self raising flour)
1 tbsp ground almonds
Pinch salt
1 level tsp baking powder
Pinch instant coffee
1 tbsp smooth nut butter
1 tbsp vinegar
1 tbsp plain yogurt
About 200ml (or just less) hot water & 1 heaped tbsp cacao/ cocoa
1/2 tsp black food colouring (or more, depending on brand & strength)

TO TOP
2 tbsp cream cheese
1 tsp cocoa/ cacao powder
1 tbsp syrup
1/2 tsp black food colouring
Splash water

Edible eyes

Method

  1. Preheat the oven to 180°C

  2. Mix all the dry ingredients together (apart from the cocoa)

  3. Mix the hot water and cocoa together. Incorporate the hot water into the dry ingredients, bit by bit, until you’re left with a cake batter. You may not need all the water - if this is the case, add a bit more cocoa to the batter

  4. Add the nut butter, yogurt vinegar and black food colouring and mix until smooth

  5. Bake at 180 for 12-15 mins, or until risen and cooked through

  6. Leave to cool and mix all the icing ingredients together

  7. Spread the icing over the cake, then top with edible eyes

Notes + Variations:

You can use vegan protein powder, or miss the protein powder out all together, and sub it for self raising and almond flour, as stated in the recipe.
