Jaffa cake breakfast donuts

These are some of the best donuts I’ve made. The resemblance to a Jaffa cake is uncanny.

Recipe: makes 8 donuts;

THE DONUT:
8 tbsp oats, ground to oat flour
1 tsp baking powder
1/4 tsp bicarb
30g vanilla whey protein
2 tbsp sugar
1 tbsp cashew butter
1 tbsp vinegar
250ml milk
1 tbsp yogurt

TO TOP:
100g dark choc
3-4 tbsp smooth marmalade
Orange rind

Method

  1. Preheat the oven to 190 Celsius

  2. Blend 2 cups of oats to a fine flour, then spoon 8 tbsp of the oat ‘flour’ into a bowl.

  3. Combine the dry ingredients: oats, baking powder and bicarb, vanilla protein, and sugar.

  4. Add the wet ingredients: milk, yogurt, vinegar, and cashew butter and mix well. It should look like cake batter- you may need more milk or more oat flour depending on ingredients used. Add a pinch of salt and mix.

  5. Grease 8 silicone donut holes, or 6 muffin cases and line with muffin tins

  6. Divide the mixture evenly between the holes, then bake for 12 minutes.

  7. Microwave for 1 minute at 1000W

  8. Melt 100g chocolate, and mix 4 tbsp marmalade with a splash water in a separate bowl.

  9. When the donuts are cool, dip them upside down in the marmalade so that they get a good coating

  10. Leave to rest for a minute, then spoon over the melted choc and top with orange rind

  11. Leave to set or eat straight away.

Variations:

Use a different nut butter/ seed butter, but make sure its smooth.

Use any flavoured smooth marmalade - orange makes it taste most like a Jaffa cake.

Use milk, dark, or white chocolate.
