Last minute PB and J yoghurt bowl

For when you don’t have granola made. You can easily make this in about 5 minutes.
Making your granola this way makes it that you can have a different flavour every day too, so give it a try.

Recipe

THE GRANOLA
1 tbsp smooth peanut butter (deep roast is best)
1 heaped tbsp protein powder - I use vanilla
1 tsp syrup

THE ‘JAM’
1 cup frozen berries (you can use fresh too)
1 tsp syrup or sugar

Method

  1. For the granola, you’ll need a microwave if you want to save time, but you can make this in an oven (although that kind of beats the point).

  2. Mix the peanut butter, protein powder and syrup until you have a cookie dough texture.

  3. Add a small sheet of parchment to the bottom of a microwave safe plate.

  4. Roll the dough into a ball, then flatten out so it’s about 1cm thick.

  5. Microwave in 30 second intervals at 600W, changing its rotation on the plate every 30 seconds - this will stop 1 bit from burning.

  6. After about 60-90 seconds, your dough should have risen slightly, and appear to me more crumbly.

  7. Remove from the microwave and leave to cool for around 5 minutes - this will make it firmer, and make sure that it’s crumbly.

  8. Whilst your granola cools, add your berries and sweetener of choice to a microwave safe bowl and microwave on full power for 60-120 seconds, until the berries have melted. Set aside to cool.

  9. Now to serve, add your yoghurt to your bowl, then crumble over the ‘granola’, and add as much jam as you’d like. You can add any other toppings here too.

Notes + Variations:

If you don’t want this to be peanut butter flavoured, use any nut butter you like - you could even use seed butter if you have a nut allergy.
