This is another thing my mum had made for us almost every single week, probably until we were all about 18. Well, she always had some sort of cake on the go.
I’m never going to compete with hers, she has a magic touch, but this is a very easy & tasty thing to fill the hole this easter.

Recipe, makes 6-8 slices;

150g bar chocolate with hazelnuts
1 cup chocolate chips/ chocolate buttons
1/4 butter/ cocoa butter
8 crumbled digestives/ rich tea biscuits
1 cup marshmallows, chopped

Method

  1. Melt your chocolate and cocoa butter in a microwave safe bowl until you have a nice smooth chocolate.

  2. Once melted, crumble in your biscuits & add your chopped marshmallows.

  3. Mix everything well until all the marshmallows and biscuits are completely coated in chocolate.

  4. Add everything to a small lined tray.

  5. Press it down with the back of a spoon, or a spatula, then refrigerate for at least 1 hour, or overnight.

  6. Cut into 6-8 squares, then serve.

  7. Keep in the fridge in an airtight container for up to a month.

Notes + Variations:

You don’t have to put hazelnuts in this, or us hazelnut chocolate - that’s just what I had, and it was very very tasty. My mum used to use a mix of milk and dark chocolate and it was amazing.
