Single serve apple crumble

HELLO THERE. I’ve made you a single serve apple crumble recipe, with what I think is THE BEST vegan custard out there (from Coconut Collaborative)

I’m definitely a custard over ice cream person when it comes to crumble, and have loved this specific custard for over a year now, so if you’re after a vegan one with none of the faff, this is the one to go for.

This is for those busy people, who can’t quite commit to making a full tray of something, for fear that they’ll never finish it (this is me every day). If you’re not one of those people, please feel free to multiply this recipe up, just bake it in a bigger dish and save the rest for later in the week.

Recipe, serves 1-2;

THE APPLES
1 large apple, peeled, cored and cubed
1 tsp sugar
1 tbsp lemon juice
Splash of water

THE CRUMBLE
1 large tbsp crunchy peanut butter or other nut butter of choice (cashew works really well)
1 tbsp honey
2 heaped tbsp oat flour or fine stoneground oatmeal
1 heaped tbsp rolled oats
Pinch of salt
Optional: pinch of sugar

TO SERVE
Coconut collab custard (hot or cold)

Method

  1. Peel your apples, then core and cut them into chunks.

  2. Add to a saucepan on medium heat with your lemon juice, water and sugar, then reduce the heat to medium-low and cover with a lid.

  3. Whilst your apples are cooking, preheat your oven to 170°C.

  4. Add your peanut butter and honey to a bowl, followed by your oat flour and a tiny pinch of baking powder.

  5. Mix these together using the back of a spoon, then begin to combine with your hands so you have breadcrumbs.

  6. Add 1 tbsp of milk at a time, continuing to pinch and mix the crumble with your hands - you want it to be crumbly, with some clumps sticking together - add your rolled oats at this point.

  7. Once your apples are cooked, mash them up slightly, but not fully, using the back of a fork, or a potato masher, then spoon into your baking dish.

  8. Top with your crumble, then bake for 15-20 minutes, or until your crumble has started to crisp up and turn golden brown.

  9. Remove from the oven and leave to rest for at least 5 minutes before serving, then warm up your custard (if serving it warm), and pour over.

Notes + Variations:

Use whichever nut butter you like here, and you can change up the fruit as you please too.
