Soy salmon with spicy noodles and sweet carrot purée

This is a great week night dinner, which you can have prepped, and whip up in 10-15 mins. It’s also a great meal to make if you have friends round/ want to impress.

Recipe: makes 2 portions;

THE CARROT PURÉE
2 carrots
1 garlic clove
1 fingertip sized piece ginger
1 large tsp miso paste
Splash milk
1 large tsp tahini

THE NOODLES
Black noodles (you don’t have to use black noodles, but it does look good)
1 tsp sriracha



THE SALMON
- 2 salmon fillets
- 4 tbsp soy sauce
- 2 tbsp hot sauce
- 2 tsp Mirin

TO TOP
- 1/4 cup edamame
- Chilli
- Coriander

Method

  1. Marinade the salmon, cutting it into chunks and set aside

  2. Chop the carrot into slices and steam for about 5-10 minutes until it starts to go soft

  3. Add the carrot to a blender with the purée ingredients and blend until a smooth paste forms

  4. Cook your noodles, then add the sriracha to them and mix well

  5. Grill your salmon or other protein for 2-3 minutes on each side

  6. Add the carrot purée to your plate, top with the noodles, salmon, chilli, edamame and coriander

Variations:

Add some crunchy seeds/ nuts - I also love hemp hearts.

Add an egg or some roasted tofu for some extra protein.

Use a different syrup - I love agave, maple syrup and honey.
