Strawberry & cream breakfast flapjack

I’m on a constant mission to make oats into fun things. Here’s another way to do just that. A breakfast flapjack with strawberry yogurt & more strawbs - perfect for strawberry season.
You can change up the fruit on this too, and even use stewed fruits/ jam.

Recipe

THE FLAPJACK
2 tbsp oat flour
1 tbsp oats
1 tbsp vanilla protein powder
1 tbsp almond butter
1 tbsp honey
1 tsp melted coconut oil

TO TOP
2 tbsp strawberry yogurt/ cream cheese
4-5 strawberries

Method

  1. Preheat your oven to 170°C.

  2. Add everything for the flapjack to a bowl, apart from the coconut oil, and mix until you have a crumbly consistency.

  3. Add your melted coconut oil, mix well until you have a wet crumble, then flatten the mixture into a small lined dish/ baking tray.

  4. You want it to be about 1.5cm thick.

  5. Bake for 12-15 mins, or until looks golden brown.

  6. Remove from the oven and leave to cool down slightly, or until its crisped up.

  7. Top with your yogurt/ cream cheese, then your sliced strawberries, syrup and cacao nibs.

Notes + Variations:

Change the yogurt flavour up too, and the fruit. A summery passionfruit/ mango one could be nice, or even something more chocolatey.
