The best pasta salad on the planet

My mum made this for us SO often when we were younger, and to this day, I remember it being one of the tastiest things ever.

Recipe

2 cups pasta
150g cherry tomatoes
8 sundried tomatoes (optional)
1 ball burrata, sliced open
1 small handful black olives
8 basil leaves
4 tbsp pine nuts
4 tbsp olive oil
3 tbsp balsamic
Salt and pepper

Method

  1. Boil your pasta in well salted water, then drain when cooked as you like it.

  2. Chop your cherry tomatoes and olives in half, your sundried tomatoes into slices, and finely slice the basil

  3. Mix in a large bowl, with the cooked pasta, the balsamic and olive oil, and season to taste.

  4. Top with your pine nuts, and ball of burrata and finish with olive oil.

Notes + Variations:

You can change the pasta shape up as you like, and change up what you put in it, but ALWAYS use balsamic and olive oil to dress it. It’s the best.
