This was the start of baked oats for me. Probably ate it every day for 3 months - it converted me to a breakfast person.

Banana bread for breakfast? It’s a yes from me.

Recipe

2 handfuls / half cup oats, ground to oat flour
1/2 banana, mashed
1 heaped tbsp vanilla whey protein powder (can sub for sugar/ syrup too)
1/4 tsp bicarbonate of soda
1/2 tsp cacao powder
1 tbsp flaxseeds
Sprinkle cinnamon
Splash vanilla
50ml of milk of choice
Pinch salt

Method

  1. Preheat the oven to 170°C

  2. Blend your oats until they resemble flour (unless you already have oat flour)

  3. Mash the banana in an ovenproof bowl.

  4. Add the protein powder, the oat flour, and the milk and mix well.

  5. Add the rest of the ingredients. Top with choc chips or any other toppings.

  6. Bake in oven for 20-25 mins, then top with peanut butter/ any other toppings and serve.

Notes + Variations:

If you’re short on time, you can microwave this instead, but I’d recommend it going in the oven for atleast 10 minutes for best results - you can microwave it for a minute if it’s been in the oven for 10 mins.

You can also prep this the night before + microwave it to reheat in the morning - you can hardly tell the difference.
