Dishoom style granola

This is THE best easy, basic granola, which will most likely become your weekly pantry staple. It’s made in one pan too, so there’s hardly any washing up!!!

Recipe, makes a large jar full

1 3/4 cup jumbo oats
1 tbsp butter
3 tbsp honey
1 tbsp maple syrup
Sprinkle cinnamon
1 cup mixed nuts - we used roasted cashews, almonds, pistachios, pumpkin & sunflower seeds
1 tsp desiccated coconut
1/2 tsp sesame seeds
Maldon salt
Sprinkle sweet cinnamon (cassia)

THE BOWL
4-5 tbsp greek yoghurt + 1/2 tsp vanilla bean paste
Honey - they use starflower honey, but you can use any
Fruit of choice - they use melon, oranges, apple, grapes, berries

Method

  1. Preheat your oven to 190°C (fan)

  2. Melt your butter and syrups in a saucepan until your butter has melted.

  3. Remove from the heat, then add your oats & your mixed nuts and seeds.

  4. Stir everything well, then stir through your desiccated coconut, sesame seeds, and a pinch of salt.

  5. Sprinkle some sweet cinnamon over, mixing through well.

  6. Pour the granola into your baking tray, spreading out evenly.

  7. Bake in 10 minute intervals for about 40-50 minutes until it’s turned completely golden brown - at around 30 minutes, it’ll turn brown very quickly, so keep an eye on it at this point.

  8. Remove from the oven, leaving to cool completely, then pour into your jar of choice.

  9. For the granola bowl, mix your yoghurt with vanilla beans, or vanilla bean paste, then start to layer your bowl - yoghurt first, a handful of granola, the fruit - repeat 3 times, finishing with granola, fruit & a drizzle of honey.

Notes + Variations:

Add whatever spices you like to the granola, and make this your own.
