Banana bread waffles with chocolate butter. I don’t know where this came from, but flavoured butters deserve their hype.
I’m going to make Belgian waffles soon too, but these are just a simple pancake batter-esque waffle.

Recipe

THE WAFFLES
1 banana
1 egg
Splash milk
1 tbsp sugar
1 tsp butter, melted
1/4 cup self raising flour
1/4 cup plain flour
1 tbsp chocolate chips

THE BUTTER
2 tbsp softened butter
50g melted chocolate (I used a mix of milk and dark)

TO TOP
Syrup to top
Cacao nibs to top
Banana slices / banana chips

Method

  1. Remove your butter from the fridge, to allow to come to room temperature.

  2. Grease and pre-heat your waffle iron.

  3. Mash your banana well, so there are no big chunks, then crack in your egg.

  4. Add 1 tsp melted butter and sugar, then stir though your flours

  5. Once you have a nice batter, add your chocolate chips and stir through evenly.

  6. If your batter is too thick, add a splash of milk.

  7. Add your batter to your greased waffle iron - it should make 2-3 waffles, and cook for around 3-5 minutes, or until cooked through and golden brown on the surface.

  8. Whilst your waffles cook, for the butter, whip together softened butter and melted chocolate, until smooth - I used a spatula and whisk for this.

  9. Refrigerate the butter for a couple of minutes.

  10. When your waffles are done, add them to a plate, then top with 1 tbsp of your chocolate butter, a healthy drizzle of syrup, and any other toppings you fancy.

Notes + Variations:

You don’t have to use chocolate butter - just sub it out for normal butter, or leave it out, although it did make these.
