Basically every time I go to Dishoom I get this for brunch. It’s so basic, but so so good.
Eggs, sandwiched between naan, with chilli jam and cream cheese. It can’t be bad.

Recipe, makes 1 portion

2 eggs, fried + oil to fry them in
1 naan, cut into 2 semicircles (so when folded it forms a triangle) - can be leftover
2 tbsp yoghurt or cream cheese
2 tbsp chilli jam + more to serve
Salt and pepper
Fresh coriander

Method

  1. Fry your eggs as normal, leaving them sunny side up.

  2. Once your eggs are almost done, steam or microwave your naan, then add to your plate.

  3. Fold each semicircle into 2 triangular sandwiches, then on one of the inside sides, spread 1 tbsp of your cream cheese, then 1 tbsp of chilli jam.

  4. Place the egg in the middle of each naan, then close it, being careful to not squish the yolk.

  5. Top with coriander, then serve with some chilli jam on the side.

Notes + Variations:

You could also add sausages or bacon in this, and serve with any sauce you fancy. It’s a great thing to do if you have leftover naan after a curry.
