Blueberry and white chocolate cake pops

These are some of my favourite energy balls, and I’m really unsure on white chocolate, but these made me change my mind.

Recipe: makes 6-8;

4 tbsp oat flour
2 heaped tbsp sugar
4 tbsp blueberry yog
30g vanilla whey protein powder
Salt
1 tsp baking powder
Sprinkle bicarbonate of soda
1 tbsp cashew butter
Handful of blueberries, chopped

1 tbsp cashew butter
2 tbsp blueberry yog

150g White chocolate

Method

  1. Blend 2 cups of oats until they resemble fine flour

  2. Measure out your oat flour, and mix all the dry ingredients with the oat flour in a large bowl

  3. Add a splash of water and the yogurt

  4. Add and mix the cashew butter through

  5. Add more water or oats if you need - it should resemble thick cake batter

  6. Put in the microwave for 3-4 mins at 1000w

  7. Take out and spoon into a large bowl whilst the mixtures still warm

  8. Leave to cool for 5 mins, then add the 2 tbsp blueberry yogurt and 1 tbsp cashew butter

  9. Massage with your hands until the yogurt and cashew butter are mixed in, then roll into 4-6 balls

  10. Melt your white chocolate, then coat all the balls in it and leave to set in the fridge

  11. Keep in the fridge in a container for up to 1 week

Notes + Variations:

You can always use vegan protein, but it will result in a more doughy texture.
