Tofu caprese toastie

If you’re dairy free, this is the PERFECT alternative. The tofu replaces mozzarella really really well - I’d probably choose it over it to be honest.

Recipe:

2 slices bread
1 tsp pesto ( I use homemade)
1 tsp tomato purée
1 tsp cream cheese
1 basil leaf
1 tbsp roasted pine nuts
Balsamic
Salt and pepper
1 slice beef tomato
Slices red onion

1/3 block firm tofu
2 tbsp pesto

Method

  1. Cut your tofu into 2-3 slices, then marinade in 2 tbsp pesto and set aside for Atleast 10 mins (overnight is best)

  2. Turn on your toastie maker or grill and grease with olive oil

  3. Toast your bread until just going golden, then on one side spread pesto and tomato purée, and on the other do cream cheese

  4. Put the tofu slices on one side, followed by the tomato slice, some red onion, pine nuts, basil, balsamic and salt and pepper

  5. Toast for about 5-6 mins or until the outside is crispy

  6. Serve with more balsamic, pine nuts and basil.
