Caramelised bananas with rum frozen yogurt

Got some Don Papa Rum, and I have to say, I’m not normally a huge fan of rum, but this one is amazing.
If you pre make this frozen yogurt, you can whip this up in less than 10 minutes for a pretty impressive dessert.

Recipe

THE BANANAS
1 tsp butter
2 tbsp coconut sugar
40ml Don Papa Rum
1 banana, sliced in half lengthways

THE FROYO
250g plain yogurt
2 tbsp condensed milk
15ml Rum

TO TOP
Roasted pecans

Method

  1. Prep your froyo at least 3-4 hours before you’re ready to eat this, as that’s how long it takes to freeze.

  2. Mix your yogurt, condensed milk, rum in a small bowl and put in the freezer - this should take 3-4 hours to freeze depending on what yogurt you use.

3. Turn the heat to medium low, then add your bananas, cut side down.

4. Leave to simmer for a couple of minutes, allowing them to caramelise, then carefully flip them with a spatula, to brown both sides.

5. Remove the froyo from the freezer and allow to warm up slightly.

6. Plate up your caramelised bananas, then scoop out 2 scoops of frozen yogurt to add on top.

7. Drizzle any remaining caramel over the froyo, then top with your roasted pecans.

Notes + Variations:

Use pre-made frozen yogurt/ ice cream for this too - you don’t have to make your own.
