Cheesy twice baked jacket potatoes

One of my sister’s friends used to have us round for these all the time. Fill with any cheese + make these as fancy as you like.
I just used a grated cheddar/ mozzarella mix, but you could use annyttthing.

Recipe

1 jacket potato

1 handful grated mozzarella
1 tbsp cream cheese
Garlic powder
Melty cheese to top (I used a square of cheese, which made my life easier, but you could just use grated)
Chives

Method

  1. Wash your potato, jab with a fork all over.

  2. Preheat the oven to 170°C Wrap it in foil, bake for 45 mins. Remove from the foil and leave to cool for 10 mins.

  3. Cut a hole in the top and remove it

  4. Scrape out majority of the insides, but don’t do it too much so the outside becomes weak

  5. Add the insides to a bowl and mash up with the cream cheese, garlic powder, season and add the grated mozzarella. Turn the oven up to 200°C

  6. Put the mix back inside the jacket potato skin, top with the cheese and bake for another 10-15 mins or until the cheese ontop is golden

  7. Top with chives and serve with anything

Notes + Variations:

As I said, use whatever cheese you like. The cheese I used for the top was smoked, and that was a very good decision indeed.
