Roasted radish with lemon and garlic cream

Inspired by a dish I had at a restaurant; for some reason, I thought roasting radishes would be weird, but they are actually delicious, and more closely resemble courgette when roasted.

Recipe, serves 1, or 2 as a side;

10 radishes
4 cloves of garlic
2 tbsp olive oil
1 tbsp honey
2 sprigs thyme
Salt
Pepper

THE CREAM:
2 tbsp cream cheese
1/4 lemon juice
1 clove garlic, crushed
1 sprig thyme, leaves chopped

Method

  1. Cut the tops off the radishes and wash them well

  2. Preheat the oven to 170°C

  3. In a bowl, combine the radishes and whole, peeled garlic cloves with the honey, oil and herbs and spread over a baking tray. Roast for 50 mins, turning over halfway

  4. Add the cream cheese mix ingredients to a small bowl and mix well- season to taste

  5. Spread the cream cheese over a plate and top with the roasted radishes.

  6. Season with fresh thyme and salt and pepper

Notes + Variations:

You can swap the cream cheese out for your favourite vegan cream cheese to make this vegan.
