Savoury french toast with sun-dried tomato pesto

This is one of those cases where a picture just won’t do it justice. This is up there with one of my top 5 brunches ever. I would die for this sun-dried tomato pesto recipe. Put it on everything and thank me later.
I actually make this vegan, with silken tofu, but you can make this with eggs too.

Recipe, serves 1, or 2 as a side;

THE FRENCH TOAST
1/2 block silken tofu*
1 clove black garlic
1 small clove normal garlic
6 basil leaves
Pinch salt
Pepper
1 tsp balsamic
1 thick slice bread (I used seedy sourdough)

TO TOP
1 heaped tbsp sundried tomato pesto - use my recipe here
Balsamic
Toasted pine nuts
Cream cheese, ricotta or mozzarella
Basil

Method

  1. Make your sundried tomato pesto - recipe is on my feed (will also be on my story)

  2. Add the tofu and the rest of the french toast ingredients to a blender (apart from the bread). Season with salt and pepper and blend until smooth and thick.

  3. Pour into a dish, then cut 1-2 pieces of bread into 3-4 fingers. Soak them in the mixture for a few minutes

  4. Grease a pan with olive oil and fry the french toast sticks on each side until golden

  5. Add to a plate with 1-2 tbsp sundried tomato pesto, pine nuts, cream cheese, basil, salt and pepper.

  6. You could also add Parmesan if you aren’t vegan.

Notes + Variations:

*Can use your typical egg mixture here, but add the rest of the ingredients
